2 tbs Hi-PRO smooth peanut butter
250ml chilled coconut milk (we used Alpro)
5 brazil nuts, halved
2tbs ground almonds
2-3 ice cubes
few sprigs fresh coriander (including stalks)
½ lime, juiced
Place all the ingredients in a high-speed blender and puree until smooth. Sprinkle with a pinch of ground almonds or a little lime zest if desired
