Chicken Buddha Bowl with Peanut Butter Dressing

Buddha bowls are a brilliant way of fuelling your body with a variety of carbohydrates, protein, nutrients, healthy fats and healthy grains all in one easy to make meal! It is pretty much anything goes with the ingredients you choose to add, you can’t really go wrong. But here’s one to get you started with a tasty peanut butter dressing for good measure.

Buddha Bowl:
  • 1 sweet potato
  • 1/2 a red pepper
  • 50g baby spinach
  • 1 chicken Breast
  • 1/2 an avocado
  • 20g feta cheese
  • 20g beetroot
  • 1/4 of a cucumber
  • 100g Couscous
  • 1 tsp sesame seeds
  • 1/2 tsp garlic powder
  • 1/2tsp peri peri seasoning
  • 1/2 squeezed lime juice
  • 1 tbsp honey
  • 2 tbsp Hi-PRO smooth or crunchy
  • 1 tbsp soy sauce
  • 1 tbsp olive Oil
  • 1/2 tbsp garlic powder

Preparation time: 15 minutes

Serves: 1


  1. Dice the sweet potatoes into cubes then place on an oven tray, top with olive oil and season with salt and pepper. Bake the potatoes in a pre heated oven at 190c for 25-30 minutes.
  2. For the chicken, drizzle with olive oil and season with salt, pepper, garlic powder and peri peri seasoning. Bake in a pre heated oven at 190c for 25-30 minutes until thoroughly cooked.
  3. Meanwhile, chop up the red pepper, avocado, cucumber, beetroot, feta cheese, and baby spinach and place in a bowl for serving.
  4. Put the cous cous in a seperate bowl and pour over boiling water and leave to soften for 2 minutes.
  5. For the dressing, whisk together the soy sauce, Hi-PRO, honey, garlic powder, olive oil and lime juice until the consistency is smooth.
  6. Once the chicken and sweet potato are fully cooked and the couscous has softened, place in the serving bowl with the rest of the ingredients and drizzle with the peanut butter dressing and top with sesame seeds.
